- Salad leaves
- Tablespoon of mayonaise
- Teaspoon of paprika
- Half a red pepper
- Any old or slightly stale bread, cubed
- Prepare the leaves for your salad and gently fry the red pepper and cubed bread in olive oil together with a little black pepper.
- Hard boil the eggs and let them cool. I then used the Eggspress mould to shape them into hearts. This involves putting them in the mould and placing in cold water for 10 mins.
- Take the yolks out of the eggs and mix with the mayonnaise and paprika. I then piped the filling back into the eggs but scooping back in with a teaspoon would be just as effective.
- Arrange and dress your salad with any preferred salad dressing.
I am also entering this into this month's No Waste Food Challenge hosted by Elizabeth's Kitchen. Elizabeth has set us the challenge of creating recipes using eggs. |
