We had such an array of wonderful cakes. Banango cake - Banana and Mango, a brilliant apricot and chocolate cake and huge selection of cakes that used sugar substitutes.
I made this More-fruit-than-cake Cake from Leon's Baking and Puddings. I have got to say I'm not sure how healthy it was. It has 375g of figs in it but also, a lot of honey and red wine! I didn't put in all the honey suggested as it just seemed too much! It was however a very moist and flavoursome cake.
I served the cake with some Greek Gods Honey Yogurt I had been sent to try, it is available in larger Sainsbury stores. The yogurt is thick and creamy but not too sweet and it doesn't have any strange ingredients or flavorings - just good yogurt and honey. It does have a tendency to separate out a little but nothing a quick stir won't solve! It was a perfect addition to this cake. I cut out a little section in the middle to make space for my yogurt bowl.
